Paleo/Gluten Free Pancakes

Paleo/Gluten Free Pancakes. Struggling to find good gluten free and paleo breakfast recipes? These pancakes are sure to be a hit with even the pickiest eater. Bonus: They are really easy to make!

These are a favorite breakfast (sometimes dinner!) food at our house. The kids love them and don’t even know they aren’t “real” pancakes.

Paleo/Gluten Free Pancakes

  • 4 eggs
  • 4 Tbsp coconut flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup milk (any kind of milk works)
  • 2 Tbsp honey


  1. Mix together until no longer lumpy, let sit for a few minutes to thicken up the batter.
  2. Butter a pan or electric griddle, the more butter the better.
  3. Pour the batter onto the griddle.
  4. Cook over medium heat.
  5. Flip the pancake over when it is golden brown on the bottom side.
  6. Cook until golden brown on the other side.

I have been trying to eat wheat-free (though I got off track during the holidays) and we have tried oat pancakes but the children don’t really like them.
