Summer brings back memories of spending all day outside and chasing down the ice cream man every chance we got. I loved our ice cream man because he always had Klondike Bars for a quarter. I remember having to eat it so fast, before all the ice cream and chocolate melted everywhere. Those 2 minutes of ice cream bliss made my summer. Sadly our neighborhood ice cream man charges at least $3.50 for me to relive my childhood summer 🙁 Needless to say my kids don’t ice cream treats from him very often. Not to fret though! My daughter and I put our brains together and after a couple ice cream and chocolate mishaps we have finally created the ultimate summer treat that is not only cheaper, but made with only whole ingredients. Another #ParentingWin!
These are fairly easy to make and the kids will love helping you out, just be prepared for a bit of a mess if you are letting them help 🙂
Copycat Klondike Bar Recipe (Can Even be Made Paleo!)
Ingredients
- 2 cups heavy cream (or coconut cream to make it paleo)
- 1/2 cup sweetener of choice (I used honey and it was delicious!)
- 2 tsp of vanilla (you may want more or less depending on taste)
- 1/4 cup coconut oil
- 2 cups chocolate chips (I use my favorite, enjoy life)
Instructions
- Mix cream, sweetener and vanilla in a blender or food processor until thick and creamy.
- Pour (or scrape) into a parchment lined 8×8 cake pan
- Freeze for at least 6 hours
- Remove from freezer and turn pan upside down to release the ice cream.
- Cut into squares and return to freezer
- While the ice cream is freezing again, melt chocolate chips and coconut oil in a double boiler over medium heat.
- Once the chocolate has thinned, remove from heat and let sit until it has cooled to room temperature.
- Once the chocolate has cooled (don’t worry it will still be thin and easy to work with) line a cookie sheet with parchment paper and remove 3 ice cream bars from the freezer
- Working quickly, dip the bars one at a time into the chocolate, retrieve the bar with a fork and place on the parchment paper.
- Repeat this process until all the bars are coated then place the cookie sheet back in the freezer.
- After 20 minutes, you can eat them or go old school and wrap them in foil to save for later.
