I love a good sandwich. I especially love a messy, cheesy, saucy sandwich. You know the kind of sandwich I’m talking about, right? The kind that as soon as you take a bite you have sauce on your shirt, pants, and all over your plate, but it’s so good that you don’t even notice the mess you’re making. All you can focus on is taking your next bite. You blissfully groan with each bite, rolling your eyes in the back of your head, oblivious to the fact that you are most likely ankle deep in sauce and everyone is staring at you…. What? That hasn’t happened to you? Oh, you poor thing! Everybody needs at least one AMAZING, forget about the world, don’t care if I’m swimming in sauce, sandwich in their lives. Fortunately, I have the perfect sandwich for you!
This Easy Chicken Parmesan Sandwich is messy, saucy and absolutely delicious. You will probably cry when it’s gone. I know I do. But don’t worry, it’s so easy to make that you can easily whip up another one in no time!
The key to a good sandwich is, of course, good ingredients. I only use the best for my easy chicken parm sandwich.

3 boneless chicken breasts
1 cup Vigo Italian Style Seasoned Bread Crumbs
½ cup shredded parmesan
¼ cup Vigo Extra Virgin Olive Oil
1 jar Alessi Marinara Sauce
4 slices provolone cheese (non-smoked)
1 Italian bread loaf (found in bakery section)* slice into 1 in. thick slices
Pound chicken breasts out to ¼ inch thickness.
In a shallow dish, beat egg
In another shallow dish, stir together breadcrumbs and shredded parmesan
Dip each breast into egg and then press into the breadcrumb mixture to evenly coat.
In a large skillet, heat olive oil over medium heat. Add chicken and cook for 7 to 8 minutes per sides.
Remove from pan and let rest a few minutes.
Heat marinara sauce in a small sauce pan.
Spread 2 tbsp marinara sauce onto one slice of bread, top with chicken, a slice of provolone, a little more sauce, place the other piece of bread on top.
Add some tomatoes and spinach (optional)
If grilling, brush both sides with a little Vigo olive oil.
Place in preheated skillet and cook until golden brown on each side.
Doesn’t that sound AMAZING? You can even get super adventurous and turn it into a panini or grilled chicken parm sandwich! Yum!
