Alright, Supermom confession time…… I know that when people read my blog, they think I must have it all together, all the time. The blog is peppered with delicious homemade recipes, my kids always look like angels sitting around the dinner table dying to tell me how their day went and talk to me in depth about all my hopes and dreams. Um. Yeah, that is not quite my reality. While sometimes I have it together enough to put together a perfect meal all from scratch and of course all gluten-free, vegan, free-range and from an organic farm in the Sierra’s that specializes in daily vegetable yoga and positive plant affirmations, most of the time, I can barely muster the time and energy to pour milk into the kids’ cereal bowls for dinner.
Sound familiar? Girl, there is no shame in hustling home and throwing together something at the last minute. We can not all be on all the time, that would be exhausting. Sometimes you need to take the easy way out and guess what, sometime the easy way tastes just as good (if not better) than the long way!
Enter Idahoan® Mashed Potatoes.

Did you know that they are made from 100% real Idaho® potatoes and ready in just minutes. They have the best taste and texture compared to any other mashed potato, I guess that’s why they are called “America’s Favorite Mashed Potatoes.”
My favorite flavor, hands down is the Bacon & Cheddar Chipotle. Just the right amount of kick and everybody knows that I can’t turn down anything with bacon.
I’m sure you all are wondering what in the world this has to do with French Onion Chicken…….well, because nothing goes better with a chicken dinner than mashed potatoes and these mashed potatoes are so easy they are the perfect compliment to my Easy Peasy French Onion Chicken.
What I love about this recipe is how easy it is to make and how it tastes like you slaved all day in the kitchen, when in reality, it took 25 minutes (and most of that was cook time!)
Ingredients
- 2 sweet onions, thinly sliced
- 3 tablespoons butter
- 1 cup beef broth
- 5 boneless skinless chicken breasts
- 1 tablespoon oil
- salt and pepper to taste
- 2 tablespoons cornstarch
- 4 slices provolone cheese
- 4 slices swiss cheese
- fresh thyme
Instructions
- Preheat oven to 400 degrees.
- In a large oven-safe skillet melt butter over medium high heat.
- Add onions and saute for 3-4 minutes until translucent.
- Continue to cook, stirring occasionally so the onions don't burn, for about 15 minutes longer until browned
- Use tongs or a fork to transfer to a bowl and cover to keep warm.
- While onions are cooking, prepare the chicken by drizzling with oil, then seasoning with salt and pepper (to taste) and fresh thyme.
- Once onions have finished cooking and are removed from the pan, cook chicken for 4-5 minutes on each side (don't clean out the pan between the onions and chicken) until browned on both sides.
- Transfer chicken to a plate and cover to keep warm and return the onions to the pan.
- Add beef broth to skillet
- Mix 1 tbsp cornstarch with 1 tbsp water and stir until dissolved, then add to beef broth and onions and continue to cook, stirring throughout, until mixture comes to a boil. Season with salt and pepper to taste. Return chicken to pan and spoon some of the sauce over each piece of chicken.
- Top chicken with one slice of provolone each, then one slice of swiss.
- Put skillet in preheated oven and cook for about 10 minutes until chicken is cooked through completely and cheeses are melted.
- Spoon some of the onions and gravy over the top of the chicken, garnish with thyme
- Serve warm and with your favorite flavor of Idahoan Mashed Potatoes
