It’s no secret that I love to throw parties, my house is sad when it’s not full of my family and friends. The problem is that time and money are precious commodities these days, so any party that I have has to be easy, fun and cheap. Lucky for me I found a way to pull of all three for a fun Valentine’s Day themed party, I know you are dying to know how in the world I could pull off such a feat, well let me fill you in on some of my secrets!
Let’s start with food, the most important part of any party, right? Past party experiences with kids has proven messy snacks that stain anything they come in contact with are to be avoided at all costs, no one likes to be cleaning red cupcake frosting or fruit punch out of the carpet long after your guests have left. That’s why I serve Capri Sun at my parties, not only are they totally in my budget (only 6.98 for a 40 pouch variety pack at my local Sam’s Club!) but they are free from artificial sweeteners, flavors, colors (no stains on my carpet, hooray!), or preservatives. Snacks are just as crucial as drinks and honestly I’m kinda over cupcakes, mainly because they are messy, but also because everyone serves them at a party. One way to make my party fun is to serve food that you don’t get at every other party you go to. Let’s start with these meringue lollipops.
These are so easy and so cheap! 2 egg whites and a cup of powdered sugar and you’re in business. To make these unique treats, just follow my meringue recipe. You can keep the peppermint extract or you can sub it out for some natural strawberry flavoring found at most health food shops. Use a 1 cm round tip and pipe large circle swirls or heart shapes and then decorate with sprinkles before you bake. You can cheat a bit and draw the hearts on the parchment paper with marker before you pipe, just make sure to flip it over before you pipe so the marker doesn’t come off on the meringues. After the meringues have cooled attach lollipop sticks (found at any craft store) with royal icing.
Next I made some Valentine White Chocolate Popcorn. This is such an easy and delicious recipe, it is always a hit! All you need is popcorn, white chocolate and sprinkles. Melt 12 oz of white chocolate in microwave or with a double boiler. Put 8 cups of popped popcorn in a bowl and pour melted chocolate over the popcorn. Stir until the popcorn is well coated. Spread mixture out on a piece of parchment paper and cover with sprinkles, the more sprinkles the better. Let sit about 30 minutes or until the chocolate cools and hardens. Once it’s set, break apart and serve in decorative cupcake liners.
So we got the food covered, now how about the fun? I’m a big fan of old school fun so for this party I’m planning a fun coloring contest and some fun rounds of Valentine Mad Libs (who doesn’t LOVE Mad Libs?!)
