Honeycomb Cereal was one of my favorite cereals growing up. Every time I see that yellow box on the store shelves it takes me back to Saturday mornings in the summer when I would get up, pour myself a giant bowl of honeycombs and watch cartoons until my mom made me go play outside. Ah, memories.
This year is Honeycomb Cereal’s 50th birthday and I was asked by the awesome peeps at Post to create a new recipe featuring those sweet little honeycombs.
I said yes right away and then spent 3 weeks trying to come up with the perfect recipe that would do the cereal of my childhood justice. I enlisted the help of my husband, kids and best friends to come up with just the right recipe. In the end it came to me in a dream. No seriously, I’m not even kidding here. I actually had a dream about this lovely Kid Friendly Honeycomb Cereal Breakfast Parfait.
It was so simple and so perfect and my kids (who usually hate yogurt!) actually loved it. See? Dreams do come true.
It’s really such an easy and healthy thing to throw together in the morning, plus the kids feel all elegant and sophisticated when I put it in a fancy bowl with a stem. It really is the little things.
So here is how you make this uber kid friendly breakfast treat.
3-4 sliced strawberries (you could also use blueberries, so yummy!)
1 cup of vanilla yogurt
1/2 cup Honeycomb Cereal
Create a layer of sliced strawberries on the bottom of the bowl, cover with 1/2 the yogurt, pour the 1/2 cup of Honeycomb cereal over the yogurt and top that with another layer of sliced strawberries. Pour the rest of the yogurt over the top, garnish with a few more Honeycombs and a sliced strawberry. Serve immediately.
