Paleo Chocolate Silk Pie

Are you a chocoholic caveman? I totally am! Bacon and chocolate are my vices and one day I’m going to combine them into something glorious, but for now I’ll just settle for indulging my chocolate cravings today with this delectable dessert.

You are going to LOVE this paleo chocolate silk pie! It is creamy, chocolatey and completely paleo so that makes it pretty much guilt free! This is the perfect dessert to take to a get together with non cavemen, nobody will even notice that it’s paleo, it just that good 🙂

Ingredients

    Chocolate Crust:
  • 1 3/4 cup blanched almond flour
  • 1/3 cup cocoa powder
  • 1/3 cup coconut sugar
  • 1 large egg
  • 1 tablespoon coconut oil
  • Chocolate Mousse:
  • 5 ounces semisweet chocolate , coarsely chopped or chocolate chips
  • 1 cup cold coconut cream
  • 3 large egg whites (no traces of yolk), at room temperature

Instructions

    Crust:
  1. Combine all ingredients in a bowl and mix until a ball forms.
  2. Press into a 9 inch pie plate and bake at 325 for 10 minutes.
  3. Let cool completely before adding chocolate filling.
  4. Filling:
  5. Using a double boiler melt 1/4 cup cream and chocolate, stirring occasionally.
  6. Remove from heat and set aside.
  7. Beat egg whites on high until stiff peaks form, about 1-2 minutes.
  8. Place the remaining 3/4 cup of cream in the bowl and beat on high speed until stiff peaks form, about 1-2 minutes.
  9. Using a rubber spatula, fold half of the whipped cream into the melted chocolate, then gently stir in the rest, being careful not to deflate the whipped cream.
  10. Gently fold the egg whites into the chocolate-cream until just combined and no white is showing, be careful not to over mix!
  11. Scoop the mousse into the cooled crust and smooth it into an even layer.
  12. Refrigerate uncovered until set, at least 2 hours.
  13. Top with Paleo Whipped Cream and enjoy!
