I’m loving that fall is finally here. It is arguably the best season. The leaves are creating a colorful palette in my backyard, the morning air is crisp and refreshing and I’m starting to CRAVE soups, stews and chili. This is where my handy dandy slow cooker comes into play. I can make a plethora of hearty fall dishes in that lovely piece of kitchen awesomeness.

One such enticing dish is this tasty vegetarian slow cooker quinoa chili. Packed full of super foods and flavors, this chili is the epitome of fall comfort food. You know from my Spanish Quinoa Recipe, Quinoa Pizza BitesQuinoa and Egg Breakfast Muffins and Chicken, Bacon, Broccoli and Quinoa Skillet that I’m slightly obsessed with quinoa. Since quinoa is packed full of fiber, protein and key nutrients, it seemed like a perfect, hearty replacement for meat in my favorite slow cooker chili recipe.

After a quick trip to Walmart to grab all my ingredients, including Hunt’s All Natural Diced Tomatoes and Tomato Sauce, I was ready to slave over my chili recipe. Just kidding. No effort other than opening cans involved in this super easy recipe. I just put all my ingredients in the slow cooker, turned it on low and let it slowly cook it’s way to perfection.

Vegetarian Crockpot Quinoa Chili

Ingredients

  • 2 cups vegetable broth
  • 1 can Hunt's tomato sauce
  • ½ cup uncooked quinoa
  • 15 oz can black beans
  • 1 14 oz can of Hunt's diced tomatoes
  • ½ onion, chopped
  • 2 cloves garlic
  • 1 tbsp chili powder
  • ¼ teaspoon cayenne pepper
  • 1 ½ teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano

Instructions

  1. Add the broth, quinoa, black beans and tomatoes to the slow cooker.
  2. Stir to combine.
  3. Next add the onion, garlic and the rest of the seasonings and stir a few times to combine.
  4. Set your crockpot to low and cook for 5-6 hours

One of the things I love about this recipe is how easy it is to double the recipe and make an extra batch to freeze for an even quicker dinner option next time you get really busy.

    This looks amazing Jordyn! It’s so perfect for fall and looks so hearty too! I can’t wait to make this and perhaps add extra sweet potato to it too! Happy FF and have a great weekend!

    Fall is my favorite time of year for soups and chilis! It’s so interesting to see how the quinoa reacts in the slow cooker. It seems to maintain its shape pretty well. The only time I’ve mixed soup with quinoa was in a much thinner broth. (It’s more of a springtime soup.) And, for that recipe it’s helpful to add the quinoa at the end, so that it doesn’t swell too much. This looks like such a unique dish!
