Bacon Coleslaw. This delicious bacon coleslaw recipe is a quick and easy side dish that will perfectly accompany just about any dish. It's always a hit at picnics and BBQ's. Plus you can never go wrong with bacon. Yum!

Y’all already know how much I love bacon. I’ve said it before and I’ll say it again. Bacon doesn’t judge, bacon understands, there is nothing that bacon can’t fix. Truly. So today I’m bringing you this fantastic bacon coleslaw. If you share my bacon obsession (and even if you don’t) you will LOVE this recipe. Serve it at any potluck and you will instantly be the most awesome person there and everyone will be clamoring for the recipe.

Ingredients

  • 1/2 head green cabbage, finely shredded
  • 2 medium carrots, shredded
  • 1 tbsp Himalayan sea salt
  • 1/2 cup mayo
  • 1 tbsp mustard
  • 1/4 tsp paprika
  • 1 tbsp apple cider vinegar
  • 2 tbsp raw honey
  • 1 cup cooked, chopped nitrate free bacon

Instructions

  1. Mix the cabbage and carrots with the salt and let sit for at least and hour then rinse thouroughly (it's important not to skip this step or you will end up with mushy coleslaw) if you are using a pre-made coleslaw mix, skip this step entirely.
  2. Combine mayo, honey, paprika, mustard and vinegar in a small bowl and mix well
  3. Pour over cabbage and carrot mixture and mix well
  4. Add bacon and mix well
  5. Refrigerate for at least an hour.
  6. Store leftovers (yeah right) covered int he fridge for up to 5 days.
