This delicious bacon coleslaw recipe is a quick and easy side dish that will perfectly accompany just about any dish. It's always a hit at picnics and BBQ's. Plus you can never go wrong with bacon. Yum!
Ingredients
- 1/2 head green cabbage, finely shredded
- 2 medium carrots, shredded
- 1 tbsp Himalayan sea salt
- 1/2 cup mayo
- 1 tbsp mustard
- 1/4 tsp paprika
- 1 tbsp apple cider vinegar
- 2 tbsp raw honey
- 1 cup cooked, chopped nitrate free bacon
Instructions
- Mix the cabbage and carrots with the salt and let sit for at least and hour then rinse thouroughly (it's important not to skip this step or you will end up with mushy coleslaw) if you are using a pre-made coleslaw mix, skip this step entirely.
- Combine mayo, honey, paprika, mustard and vinegar in a small bowl and mix well
- Pour over cabbage and carrot mixture and mix well
- Add bacon and mix well
- Refrigerate for at least an hour.
- Store leftovers (yeah right) covered in the fridge for up to 5 days.
