I love pizza. I could eat it for every meal, every day. My jeans, however, would rather I not. It took a while to figure out how to balance my love for pizza with my love for fitting into my clothes. Turns out the answer was quite simple. Quinoa. Putting my favorite pizza toppings on top of a superfood like quinoa was the perfect compromise and exactly what I need to be able to have my pizza and eat it too. Quinoa is my absolute favorite superfood.

The best thing about this recipe is that it’s so versatile, just like pizza! You can add whatever ingredients you want to make it your own. We have started doing this for pizza nights. Each family member starts with their bowl of quinoa and adds some sauce, their favorite toppings and of course cheese. Then we throw it all in the oven, bake it up, serve it with a salad and voila! An easy, good for you, skinny jean approved dinner that the whole family will love.

Quinoa has a light, delicate and somewhat nutlike taste.  It cooks up fluffy and adds texture and crunchiness to almost any dish.  Not only is it high in protein, it includes many essential amino acids. No wonder some (me included!) people consider it the perfect food!

I have to get on my soapbox for a minute here. I know some people think I’m crazy for my love affair with quinoa. You can see them turn their nose up a little when I mention it. Here’s the thing about quinoa, like everything else in life, quality matters. This is especially true when it comes to quinoa. If you get the wrong kind of quinoa, it will ruin you for life. You need the right quinoa to make this recipe a hit. My favorite quinoa is TruRoots Quinoa.

Quinoa Pizza Bowls

Quinoa Pizza Bowls

Yield: 8 pizza bowls
Prep Time: 20 minutes
Cook Time: 20 minutes
Total Time: 40 minutes

Quinoa Pizza Bowls. Putting your favorite pizza toppings on a bed of quinoa is like supercharging your typical pizza recipe making it healthy and delicious!

Ingredients

  • 1 cup (dry) Quinoa
  • 2 cups chicken broth
  • 1 cup pizza sauce
  • 2 cups shredded Mozzarella cheese
  • Your favorite pizza toppings

Instructions

  1. Preheat oven to 375°F.
  2. Cook quinoa in the chicken broth according to package instructions
  3. When the quinoa is done, fluff the quinoa with a fork.
  4. Stir about 1/2 cup pizza sauce into the quinoa until well combined, set aside.
  5. Lightly spray 8 large (10-ounce) oven-safe ramekins with cooking spray and place them on a large baking tray.
  6. Layer each with about 1/4 cup of quinoa mixture, and press down gently
  7. spread a thin layer of pizza sauce over the quinoa
  8. Sprinkle a layer of shredded Mozzarella on top of the quinoa.
  9. Pile on your pizza toppings
  10. Top with another layer of mozzarella.
  11. Bake for 15-20 minutes, or until the cheese is melted and the ingredients are heated through.
  12. Serve immediately.
