Awhile back I shared the benefits of adding Quinoa to your diet. In case you missed it, quinoa is a magical super food that is gluten free, full of antioxidants, nutrient dense and more. The thing with quinoa though is you either love it or hate it.

I fall in the I love it camp, I can eat it plain the same way I eat rice. If it’s prepared properly (rinsed thoroughly before cooking) I could eat it with every meal. My kids and husband fall into the hate it category. It was really frustrating to stumble upon this amazing super food only to have my kids refuse to eat it.

I have never been one to back down from a challenge, so I decided to get my quinoa creativity flowing and come hell or high water I was going to find a way to get my kids to like quinoa. IT.IS.ON.

The only thing I knew I could get all my kids to agree on is pizza, so I had to find a way to make quinoa work with pizza…. I thought about putting it on a pizza before the cheese, but that would be too obvious and they would know something was up. Then I remembered that they loved my quinoa egg muffins (until I told them they had quinoa in them…eye roll…) so I decided to take the same principal and that is how the Quinoa Pizza Bite came to life.

It is actually quite brilliant. Mix it in with cheese, sauce and pepperoni and never, ever tell them that there is quinoa inside. I will take that secret to the grave. Kids, if you are reading this, mommy is totally kidding. There is absolutely no quinoa in the pizza bites.

Anyway, if you are looking for a way to trick, er, persuade the haters into eating some quinoa, this is the perfect place to start!

Quinoa Pizza Bites

Quinoa Pizza Bites

Yield: 24 pizza bites
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Quinoa Pizza Bites are a healthy, bite-sized snack combining the delicious flavors of pizza with the nutritious benefits of quinoa.

Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup shredded mozzarella cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 cup of marinara sauce
  • 1 clove minced garlic
  • 3 teaspoons Italian seasoning
  • 1 package of mini pepperoni or regular pepperoni cut up
  • Ranch or marinara sauce for dipping

Instructions

  1. Preheat oven to 400 degrees
  2. Grease mini muffin pan.
  3. Mix all of the ingredients together in a bowl
  4. Put approx a tablespoon into each muffin tin
  5. Pack them down, add more if needed
  6. Bake for 12-15 minutes.
  7. Cool on a wire rack for about 10 minutes and then remove from pan.
  8. Makes approx 24 pizza bites
