The obsession with quinoa continues and has moved to our breakfast table. I know what your thinking, quinoa for breakfast? She musta lost her damn mind, but really I haven’t, really I have just discovered the best, most satisfying way to start my mornings. Breakfast is often forgotten by the teenagers, especially on mornings when they attend their hybrid academy classes and have to be out the door by 8:30. I gave up preparing them breakfast before they left because inevitably, they wake up late, drag their feet getting ready and scurry to the car with mere seconds to spare before I lose it and lecture them for 30 minutes on the value of punctuality.  I digress, my point here is that I had a genius idea to make them to go breakfast food that they can grab and eat in the car so they can still drag their feet and I can feel like a rock star parent for actually feeding my children. Win-win.

This is how the quinoa muffin was born, although the thought of shoving them out the door with a poptart was quite appealing, I caved and decided to go a healthier route. Since quinoa is a food that will keep you full for hours, it seemed only natural to use it in a breakfast food, the question was how to disguise it so the kids didn’t think they were actually getting healthy nutrients. The answer? Cheese and bacon, duh!

I set forth on my quest for the perfect breakfast super food and mixed together some eggs, quinoa, cheese and cooked bacon, scooped it into a muffin pan and threw it in the oven. Something magical happened that day folks, I found a healthy super food that my kids would actually eat for breakfast. Long story short (okay not really, but whatever) we now have a quick, easy and healthy breakfast food that my whole family agrees is pretty much the best breakfast food ever made.

Ingredients

  • 1 cup cooked quinoa
  • 5 eggs
  • 1 cup chopped bacon
  • 1/2 cup cheddar cheese

Instructions

  1. Preheat oven to 350.
  2. Combine all the ingredients in a bowl and mix well.
  3. Scoop into muffin tins and bake for 25-30 minutes.
  4. Let cool, but serve warm. You can also bake these ahead of time and store them in the fridge, reheat in the microwave for 30 seconds whenever you need one.

    This looks great! I've had my share of breakfast muffins but never thought of adding quinoa. I don't have any bacon on hand but I'm sure leftover ham will be just as tasty. Thanks for sharing!
