Pepperoni Pizza Salad

I’ve been craving pizza like crazy lately. Honestly, it’s the one thing I really feel deprived of when I’m trying to eat better. Unfortunately, since I’m eating cleaner this year, pizza is a big no-no. I know, it hardly seems fair. What’s a girl to do then? Well, like any good dieter, I turned the object of my obsession into a salad. A really, really good salad and while it’s not a total replacement for a real slice of ooey, gooey cheesy pepperoni pizza heaven, it makes going without it much easier.
The secret to keeping this salad clean is using nitrate free pepperoni, fresh mozzarella, and an oil and vinegar based dressing without any icky additives. You could honestly use any dressing. I bet a ranch dressing would taste amazing. I also occasionally use gluten free croutons or these parmesan crisps if I’m really craving a crunch with my salad.
Even though I did a basic pepperoni pizza salad, you could sub any of your favorite pizza topping to get a salad that suits your tastes. I bet a pineapple and bacon (nitrate free of course) would be so good, or maybe some sausage and fresh mushrooms with green peppers, honestly the combinations are endless.
So this is such a simple salad to make it really doesn’t even need a recipe, but in the interest of blogging consistency, I’ll give you one anyway.
Ingredients
- 1 cup lettuce ( I prefer butter lettuce, but romaine would work just as well)
- 1/2 cup cubed mozzarella
- 1/4 cup black olives
- 1/4 cup sliced grape tomatoes
- 7-8 slices of pepperoni, sliced in half
- Dressing of choice
Instructions
- Combine all ingredients, except dressing, in a bowl or on a plate and toss together.
- Pour dressing over salad.
