Since it’s so close to Valentine’s Day I’m taking a break from my zoodle love affair and focusing on some yummy Valentine treats. Even though I’m eating better I still have a wicked sweet tooth. It’s really not fair to constantly deny yourself some indulgent treats, right? You just have to be a little smarter about what you choose to indulge in. Maybe skip the gluten & processed sugar filled cookies and make these better for you chocolate cookies.

Since it’s Valentine’s Day, I took my super yummy Ultimate Double Chocolate Chip Paleo Cookies and spruced them up with some pink and white sprinkles and a Hershey’s Kiss. I know that makes them less healthy, but they are at least better for you than most other cookies. If you just can’t bring yourself to indulge to this extent, that’s fine. We can still be friends. You can just make the original Ultimate Double Chocolate Chip Paleo Cookies instead. They are still crazy good and pretty good for you. Either way you get to indulge in a yummy Valentine treat. Go ahead, you’ve earned it.

Now that the hardcore crunchy folk are gone, us naughty rebels can go ahead and indulge in these Better For You Chocolate Valentine Cookies. Yum!

Better For You Chocolate Valentine Cookies

Ingredients

  • 1 cup almond butter
  • 1 cup coconut sugar (if you like a crunchier cookie, use 1/2 cup brown sugar and 1/2 cup coconut sugar)
  • 1/2 cup cocoa powder
  • 1 large egg
  • 1 tsp baking soda
  • 1 tsp vanilla
  • Valentine Sprinkles
  • Hershey's Kisses

Instructions

  1. Preheat the oven to 350.
  2. Combine all the ingredients (except the sprinkles and kisses) into a large bowl, the dough will be very thick.
  3. Roll the dough into 1 inch balls, then roll the balls in the sprinkles.
  4. Put the balls on cookie sheet and lightly press down on them to make them a bit flatter.
  5. Bake for 8 minutes
  6. Remove from oven and press a Hershey Kiss into the center of the cookie.
  7. Let sit for another 8 minutes to set.
