Soft and chewy gluten free ginger snap cookies infused with molasses, cinnamon, cloves and ginger. Even die hard gluten eaters love these cookies!

More gluten free cookies? Of course! It’s cookie season, right? This one is pretty groundbreaking though. I eat gluten free, but I hate to think I’m eating gluten free, know what I mean? If I’m going to eat a gluten free baked good, the taste and texture better be exactly like a cookie packed with gluten and other various bad for me ingredients, otherwise, what’s the point. Luckily I struck gold with this recipe.

I tested it with some unsuspecting gluten eaters (shhhhhhhhhh, don’t tell) and guess what? Not only did they not realize I had given them a gluten free ginger snap, a couple even said it was the best ginger snap they have had. Pretty sweet right?! Anyway, I’m going to go celebrate my cookie victory by stuffing my face with these awesomesauce treats.

Ingredients

  • 1 3/4 cup almond flour
  • 1/8 tsp salt
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil, melted
  • 2 tbsp molasses
  • 1/2 tsp vanilla
  • parchment paper

Instructions

  1. Preheat oven to 350.
  2. Line a baking sheet with parchment paper
  3. Combine all ingredients and blend well.
  4. Form into balls- about a tablespoon of dough per cookie. Place on a greased baking sheet.
  5. Flatten them slightly with the back of a spoon.
  6. Bake for about 15-20 minutes until slightly brown on the bottom or a little bit longer if you prefer a crunchy cookie
