BBQ bites

Earlier this week I shared the easiest way to make pulled BBQ chicken in the crockpot (so good!) so today I thought I would share another way to use the pulled BBQ chicken. This makes a great lunch, you can put them in the freezer and pull out a couple for lunch or a quick snack. The great part is that the kids LOVE them!

Gluten Free Cheesy BBQ Casserole Bites

Ingredients

  • 1 cup BBQ chicken (chopped)
  • 1 cup chopped broccoli
  • 1 cup shredded cheese
  • 1 cup cooked wild rice
  • 1 egg

Instructions

  1. Preheat oven to 350.
  2. Combine all the ingredients in a bowl and then scoop into a greased muffin tin.
  3. Bake for 20 minutes.

      I made these in a regular muffin tin and it made 8 muffins. A mini muffin tin would be awesome too!
