Gluten Free Greek Flatbread

Necessity is the mother of invention, so is the case with this scrumptious gluten free greek flatbread.

It is so hot here in Atlanta. We are practically melting in the oppressive, sticky heat that the south is known for. It’s the kind of heat that makes you want to sit on the couch and do nothing until the sun goes down. Turning on the oven is a repulsive thought as it will contribute to the overwhelming heat, so we nourish ourselves with salads and cold sandwiches in attempt to avoid turning into a puddle.

The problem with salads and sandwiches is they can get boring. Really boring. In attempt to shake things up but stay cool, I’ve been experimenting with different recipes that taste delicious, but require no cooking , at least not in the heat of the day.

One of the recipes that I created is this Gluten Free Greek Flatbread, I can make the crust the night before when it isn’t so hot and then throw the toppings on the next day for a quick and easy gluten free lunch.

Ingredients

  • Paleo cracker recipe
  • 1/2 cup garlic hummus
  • 1/2 sliced cherry tomatoes
  • 1/2 cup olives (black or green, whatever you prefer)
  • 1/2 cup feta cheese

Instructions

  1. Prepare the paleo cracker recipe according to the directions found here . Only do not cut it before putting it in the oven.
  2. Bake the crust for 8 minutes
  3. Let cool (at this point you can wrap the crust in saran wrap and leave it for the next day)
  4. Spread hummus on flatbread
  5. Top with tomatoes, olives and feta cheese

    I had to laugh when I read your intro about the weather being hot. I assumed this was a December post as it has been unbelievably hot here in Tallahassee, Florida this month, it wasn't until I checked the date that I saw it was a July post! I'll have to give your recipe a try for my grandson who has to eat gluten-free.
