Bacon Wrapped Meatloaf Medallions. Everything is better with bacon! These are not only delicious but actually surprisingly good for you. This would make a great gluten free or paleo dinner recipe.

This is a party favorite at my house! In fact these are the most requested appetizer at all our get togethers with friends and family. So easy to make and how can you possibly go wrong with anything wrapped in bacon!

Ingredients

  • 2 lbs ground beef
  • 2 gloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 cup all natural ketchup
  • 2 eggs
  • 1/2 cup almond meal/flour
  • 1 package of bacon
  • toothpicks

Instructions

  1. Preheat oven to 350.
  2. Line the bottom of a boiler pan with aluminum foil for easier cleanup.
  3. Mix all the ingredients together, except the bacon in a large bowl.
  4. When well combined form into large meatballs and then wrap it with one piece of bacon.
  5. Insert a toothpick to hold it together.
  6. Place on boiler pan and cook for 40 minutes.
  7. The crispness of bacon is a hot topic in our family, some like it crispy, some like it chewy.
  8. This recipe will make the bacon chewy, if you want it crisper, after 35 minutes turn your oven on broil and broil on high for about 4 minutes to get nice and crispy bacon.

    This reminds me of some bacon wrapped hamburgers made to look like turtles that my husband and I once made together. They were really good, though we did A1 sauce in lieu of the ketchup.
