These paleo pancakes are a delicious alternative to grain based pancakes!

Paleo Pancakes

These are a favorite breakfast (sometimes dinner!) food at our house. The kids love them and don’t even know they aren’t “real” pancakes.

Ingredients

  • 4 eggs
  • 4 Tbsp coconut flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup milk (any kind of milk works)
  • 2 Tbsp honey

Instructions

  1. Mix together until no longer lumpy, let sit for a few minutes to thicken up the batter.
  2. Butter a pan or electric griddle, the more butter the better.
  3. Pour the batter onto the griddle.
  4. Cook over medium heat.
  5. Flip the pancake over when it is golden brown on the bottom side.
  6. Cook until golden brown on the other side.

    we are (mainly) paleo, and my husband makes these on the weekends for us! yummy! you can sub other things for the bananas, too...we had sweet potato ones saturday!

I have been trying to eat wheat-free (though I got off track during the holidays) and we have tried oat pancakes but the children don't really like them.     Always looking for new gluten-free/paleo ways to make pancakes. I usually just mix a mashed banana with an egg but these look a little more substantial. I think these would be a big hit!
