Yep, I totally went there! I just made the most heavenly snickerdoodles on the planet (or at least on my block) and the best part is that they are totally paleo. #Winning! My husband loves snickerdoodles, like probably more than me some days, I guess they remind him of his grandma’s house when he was little. Whenever I need to get on his good side I whip up a batch of snickerdoodles, works like a charm 🙂
Of course when we went paleo, the snickerdoodles stopped so I have been working like crazy to get a good paleo snickerdoodle recipe that doesn’t suck so I can butter him up for a new camera lens lol! Anyway after many, many, many failed recipes, this one hits the nail on the head perfectly! Yay! I can’t wait to share it with all of you!
Ingredients
- 2 cups almond flour
- 1 tablespoons coconut flour
- 3 tablespoons sunflower seed or cashew butter
- 1/4 teaspoon sea salt
- 1/2 teaspoon baking soda
- 3/4 teaspoon cream of tartar
- 1/4 cup honey
- 5 tablespoons grass fed butter (soft)
- 1 teaspoon ground cinnamon
- 1/4 cup coconut sugar
Instructions
- Preheat oven to 350 degrees.
- Combine almond flour, coconut flour, cashew butter, salt, baking soda and cream of tartar in a medium sized bowl.
- Stir in honey and butter.
- Combine cinnamon and sugar in a small bowl.
- Form dough into 1 1/2 inch balls, then roll in cinnamon and sugar mixture, place on baking sheet and press until slightly flattened (these will not flatten out in the oven like regular cookies).
- Bake for 10 minutes.
