Paleo Snickerdoodles

Yep, I totally went there! I just made the most heavenly snickerdoodles on the planet (or at least on my block) and the best part is that they are totally paleo. #Winning! My husband loves snickerdoodles, like probably more than me some days, I guess they remind him of his grandma’s house when he was little. Whenever I need to get on his good side I whip up a batch of snickerdoodles, works like a charm 🙂

Of course when we went paleo, the snickerdoodles stopped so I have been working like crazy to get a good paleo snickerdoodle recipe that doesn’t suck so I can butter him up for a new camera lens lol! Anyway after many, many, many failed recipes, this one hits the nail on the head perfectly! Yay! I can’t wait to share it with all of you!

Paleo Snickerdoodles

Ingredients

  • 2 cups almond flour
  • 1 tablespoons coconut flour
  • 3 tablespoons sunflower seed or cashew butter
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon cream of tartar
  • 1/4 cup honey
  • 5 tablespoons grass fed butter (soft)
  • 1 teaspoon ground cinnamon
  • 1/4 cup coconut sugar

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine almond flour, coconut flour, cashew butter, salt, baking soda and cream of tartar in a medium sized bowl.
  3. Stir in honey and butter.
  4. Combine cinnamon and sugar in a small bowl.
  5. Form dough into 1 1/2 inch balls, then roll in cinnamon and sugar mixture, place on baking sheet and press until slightly flattened (these will not flatten out in the oven like regular cookies).
  6. Bake for 10 minutes.
