One Skillet Sausage and Sweet Potato Hash

One thing that makes staying on track with a healthy diet is eating food that you enjoy. It seems obvious right, but you know as well as I do that sometimes when you are trying to eat healthy you fool yourself into eating food that makes you want to gag. Since starting my clean eating journey I have discovered foods that I love and foods that I hate. Foods that I can’t stand and will never eat include brussels sprouts, peas and any type of organ meat. Ick. No. Just not gonna happen.

Fortunately the list of foods that I love is way longer. At the top of that list is sweet potatoes and aidells chicken sausage. Lucky for me I can combine my 2 favorites into one glorious dish. This recipe is paleo & gluten free, atkins friendly and uber healthy. It’s one of those meals that you can make a huge batch of and eat it all throughout the week.

I’ll eat it for lunch and dinner as is and then shake things up and throw an egg on it for breakfast.

One Skillet Sausage and Sweet Potato Hash

Ingredients

  • 1 yellow onion diced
  • 1 sweet potato, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 orange pepper, diced
  • 4 links sausage ( I used aidells pineapple & bacon chicken sausage)
  • 2 tbsp coconut oil
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Combine all ingredients in a large skillet and cook over medium heat until for about 10-15 minutes stirring occasionally.
  2. Store in an airtight container in the fridge for up to 7 days.
