Easter Bunny Cones

Easter Bunny Cupcake Cones

Let the Easter madness continue! This is by far my favorite treat, I had a friend show me how to make these years ago and we still make them every Easter, they kids look forward to it every year, even the big ones. The best part is that they are so easy to make, even for little hands.

What you will need:

Mini cupcakes (from mix or scratch)

2 cups of frosting (you can make your own or the store bought kind works just fine)

Ice cream cones

M&M’s, jelly beans or some other candy to put in the base of the cone

Large marshmallows

Pink sprinkles, pink sugar beads and candy eyes

First you will need to bake a few mini cupcakes. You do not need to use liners, just grease the mini muffin tin really well. You can use a cake mix or homemade, whatever you prefer.

While your mini cupcakes are cooling, fill the cones with M & M’s, jelly beans, or whatever candy you want. This is not only yummy, but necessary to keep Mr. Bunny from tipping over 🙂

Next cut the bottom off of your mini cupcakes

Trim the edges of the top of the mini cupcake so that it can fit inside the cone without smashing it in there 🙂

Put the frosting in a frosting bag with a circle tip, or just put it in a ziploc bag with one of the corners cut off. Make a layer of frosting on top of the cake

Place the bottom of the mini cupcake on top of the frosting

Place the icing around the cake, swirling around it like an ice cream cone. Go slow in this process 🙂

Dip each ear into the sprinkles

Place the ears on top of the frosting

Add eyes and a sugar bead for the nose and you have an adorable, edible Easter bunny 🙂
