I’ll be honest, cutting back on our grains has done wonders for my family’s health and it’s been pretty easy to make the transition at breakfast and dinner but I really struggled with finding lunch foods. What could I find that would replace the ease and convenience of a sandwich at lunch? It took awhile, but I came up with several easy lunch options that I can prepare ahead of time and the kids can make for themselves. One of these is my Sloppy Joe Bites. They are super easy and the kids devour them!
Ingredients
- 1 pound lean ground beef
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1 clove garlic
- 1 teaspoon yellow mustard
- 3/4 cup ketchup
- 3 tsp honey
- 1/8 tsp salt
- Gluten free cracker bowls (recipe below)
Instructions
- In a skillet over medium heat, brown the ground beef, onion, garlic and green pepper
- Drain oil
- Stir in the mustard, ketchup, and honey
- Reduce heat, and simmer for at least 30 minutes (longer is better!)
- While the sauce is simmering prepare cracker bowls
- To make the cracker bowls, you will need a mini muffin pan and a batch of my Paleo/Gluten Free Crackers , We are going to change it up a little bit though. After you roll the dough out, use a cookie cutter (approx 3 inch diameter) and cut out the dough into circles, place the circles in the muffin pan, being careful not to tear them. Bake per the original recipe.
- Fill the bowls with the sloppy joe meat and top with some cheese. Your kids will love it!
I love this for lunches because I can make a batch of Sloppy Joe meat and a couple batches of cracker bowls ahead of time and the kids can assemble these all their own. Easy peasy and absolutely delish! Your family will love them!
