Quick & Easy Paleo Biscuits

These biscuits are a long time coming lol! I’ve been working on these for months trying to get them perfect and finally I have succeeded. These are fantastic and so easy to make!

Ingredients

  • 2 cups almond flour or sunflower seed flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 2 tbsp coconut oil
  • 5 eggs
  • 1 tbsp honey (optional)

Instructions

  1. Preheat oven to 400 degrees.
  2. Combine almond flour, coconut flour, baking powder, salt in a bowl.
  3. Add coconut oil and use a pastry cutter, 2 knives or your fingers to mix everything until it turns into crumbs.
  4. Put in the freezer for 5 minutes
  5. While the bowl is in the freezer, whisk together the eggs and honey.
  6. Combine the wet and dry ingredients and mix well.
  7. Let sit for about 5 minutes.
  8. At this point you can drop the dough on a greased cookie sheet for a drop biscuit, or you can hand form the biscuits by rolling them into balls and then pressing them flat with the palm of your hand. Bake for 12-15 minutes or until golden brown.

    My son is allergic to nuts .Can I replace the almond flour with coconut flour?

      Substituting coconut flour for the almond flour will result in a very dry, dense biscuit. You can try sunflower seed flour, I haven't used it in the biscuits, but have used it in a lot of my muffins and cookies and it makes a wonderful substitute for those with a nut allergy :)
