Spring is just around the corner! It’s getting warmer, flowers are starting to bloom and I’m waking up to birds chirping every morning. I can’t wait for the warm weather so I can leave my windows open every day and make light and delicious meals for my family. Goodbye soups and stews, hello light and fresh sandwiches and salads.
There is nothing better than a delicious sandwich and while I love all kinds of sandwiches, I’m partial to egg salad sandwiches. Some of my best memories are of my grandma and me making egg salad sandwiches and playing double solitaire all afternoon. I think those memories are half the reason I’ll choose egg salad over almost any sandwich lol.
Over the years, I’ve come up with variations of the classic egg sandwich. While they are all good, the best version by far is this green eggs and ham sandwich. This idea was born on Dr. Seuss’s birthday a few years ago, I was trying to be one of those awesome Pinterest moms and do something super cool to celebrate one of our favorite authors and came up with the ideas for this green eggs and ham sandwich.
It was a hit! The kids devoured it and always ask when we are going to have green eggs and ham sandwiches again. This sandwich is great anytime, but it’s especially fun to serve it right after Easter when you have a ton of hard boiled eggs left over 😉
This delicious sandwich is made with just 6 simple ingredients. Hard boiled eggs, avocado, Mayonnaise, honey ham sandwiched in between two delectable pieces of sourdough bread.
I’m really picky about my ingredients for this sandwich. Not just any ingredients will do. For the mayonnaise, I only use Hellmann’s® Real Mayonnaise. It is the mayo of my childhood. I feel good about feeding Hellmann’s to my family because it’s made with real, simple ingredients: cage free eggs, oil, and vinegar. No other mayo will do in my house!
For the ham, it’s Hillshire Farm® Thin Sliced Honey Ham all the way. Hillshire Farm®’s ham is slow roasted for hours ensuring that it tastes far better than any other lunch meat out there.
When it comes to the bread, only one kind will do. It must be Pepperidge Farm Farmhouse™ Sourdough Bread. This hearty bread is slow baked with wholesome flavorful ingredients for a fresh from the oven taste. It’s the only bread that compliments the flavors in this sandwich perfectly.

Ingredients:
2 hard boiled eggs, peeled
1 tbsp. Hellmann’s® Real Mayonnaise
1 ripe avocado, diced
3-4 slices Hillshire Farm® Thin Sliced Honey Ham
2 slices Pepperidge Farm Farmhouse™ Sourdough Bread.
Directions:
Lightly toast the bread in your toaster.
Mash together the eggs, mayo and avocado.
Spread egg salad mixture on toasted bread
Place ham on top of egg salad
Top with second piece of toasted bread.
