Broccoli Bacon Salad

Few things make me weak in the knees like bacon, yes I am bacon obsessed, but not just any bacon, it has to be real bacon, uncured, no nitrates and straight from the farm. Our local butcher shop carries amazing bacon, it’s thick cut and maple smoked and pretty much the best thing ever. Sadly though, I have had to resign myself to the fact that being paleo does not mean that I can eat bacon all day, every day. It’s not fair, but it’s the truth, but I have found a way to have my bacon and eat it too. I’ve learned I can mix it up with veggies in a million creative ways, so I get my healthy on without giving up my bacon obsession. Yay for me!

One of my favorite recipes lately is this divine bacon and broccoli salad with coleslaw dressing. OMG YUM! Yes, it’s really that good and of course so easy to make!

Ingredients

  • 1 cup cooked bacon (chopped)
  • 1 head of broccoli (cut into bite sized pieces)
  • 1/2 cup mayonnaise
  • 1/4 cup buttermilk
  • 1 1/2 tbsp apple cider vinegar
  • 2 tbsp fresh lemon juice
  • 1/3 cup raw honey
  • 1/2 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Combine mayo, buttermilk, vinegar, lemon juice, honey, salt and pepper in a bowl and whisk until smooth.
  2. Combine broccoli and bacon in a small bowl, pour dressing over the top and mix well.
  3. Refrigerate for 2-3 hours.
  4. Store covered in the fridge for up to 1 week.
