It’s no secret that I love buffalo chicken anything. You could frost a cake with a buffalo chicken dip and I would probably eat it. Okay, I really wouldn’t but you get where I’m going with this. You can imagine how much I love this time of year then, football season means that everybody is bringing out their best buffalo chicken recipes and I’m having to refrain from licking my computer screen whenever I’m on Pinterest. The struggle is real folks.
The great thing is that this is the time that I get to bring out my best buffalo chicken recipes too! My kids are going into buffalo chicken overload since I use them as my guinea pigs when I have a new recipe. Despite the fact that they start to twitch whenever I mention buffalo chicken these days, they did give their 12 thumbs up kid approved seal to these Buffalo Chicken Taquitos. So yay for me!
The secret ingredient that makes this recipe so yummy is Naturally Fresh Bleu Cheese Dressing.
Naturally Fresh puts high quality ingredients in their products – and you really can taste the difference. Their bleu cheese dressing is made from real chunks of aged bleu cheese, real buttermilk and real herbs making it taste delicious.
As much as I love naturally Fresh for what they put in their dressings, I love them even more for what they don’t put in them. They leave out artificial junk like preservatives, msg, artificial thickeners and artificial colors. That makes this wannabe crunchy mom ridiculously happy.
I bet you are ready to get this fantastic recipe so you can impress all of your friends, right? You win, here it is:
Ingredients
- 10-12 small corn tortillas
- Oil for frying (I prefer coconut oil)
- 2 cups cooked, shredded chicken
- 1/2 cup hot sauce
- 1/2 cup naturally Fresh Bleu Cheese dressing
- 1/2 cup whole, plain yogurt
- 1/2 cup shredded cheese
Instructions
- Preheat oven to 350.
- Combine all the ingredients in a shallow baking dish.
- Bake for 20 minutes.
- Heat oil over medium-high heat in a pot or cast iron skillet
- While oil is heating, place chicken dip on a corn tortilla and roll up, leaving the ends open.
- Once oil is hot place the filled corn tortillas in the oil and cook for 4-5 minutes flipping them over halfway through if they are not submerged in the oil.
- Place on a paper towel to absorb the excess oil.
- Serve warm with some bleu cheese dressing for dipping.
