Magical Unicorn Donuts
Yep, I did it. I jumped on the unicorn bandwagon. It was peer pressure, Facebook made me do it. All those delicious unicorn recipe videos finally got to me. They are just so cute and magical and glittery.
These Magical Unicorn Donuts are my first attempt at unicorn food and I think they turned out pretty good, if I do say so myself. My biggest issue was that I’m not really a fan of artificial food coloring and it’s hard to channel your inner unicorn without food coloring. That problem was quickly solved with this stuff:

Armed with my trusty natural food coloring, I set to work on these delicious donuts. They were a lot of fun to make and of course, they were a huge hit with the kids (No duh! They are unicorn donuts!!!) and my husband liked them too, so yay! Next time I think I may kick it up a notch with some almond extract and edible glitter. Yum!

Ingredients
- 3/4 cup buttermilk
- 6 tbsp unsalted butter, melted
- 2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- Food coloring (pink, blue, yellow)
- For the glaze:
- 3 tbsp heavy cream
- 1 cup powdered sugar
- rainbow sprinkles
Instructions
- Mix together the flour, baking powder and salt in a small bowl and set aside. In a large bowl, combine the butter, sugar, eggs and vanilla.
- Add buttermilk and mix.
- Add the flour mixture and mix until just combined.
- Separate the mixture into 3 bowls and add red, yellow and blue food coloring.
- Spoon the batter into a silicone donut pan, making sure to put each color in each donut.
- Bake at 400 for 10 minutes. Cool for 5 minutes in the pan, then flip the pan over to remove the donuts and cool completely on a wire rack.
- To make the glaze:
- Mix the heavy cream and powdered sugar together.
- Dip each donut into the glaze, then place on the wire rack.
- Repeat for all the donuts.
- Top with rainbow sprinkles
