Paleo Sweet and Sour Meatballs

This one is one of my favorite recipes, one because it tastes so good, the other reason is because it is one of the easiest meals to freeze so I can throw in the crock-pot on a day when I have no time for dinner.

Ingredients

    Meatballs:
  • 2 lbs ground beef
  • 2 gloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 2 eggs
  • 1/2 cup almond meal/flour
  • Sweet and Sour Sauce
  • 1 cup pineapple juice
  • 1/3 cup water
  • 3 tablespoons vinegar
  • 1 tablespoon soy sauce or liquid aminos
  • 1/2 cup honey
  • 3 tablespoons arrowroot powder

Instructions

    Meatballs:
  1. Preheat oven to 400. Mix together all ingredients in a bowl until well combined.
  2. Roll into small balls and place on a broiler pan.
  3. Bake for 20 minutes.
  4. Sauce:
  5. Combine the pineapple juice, vinegar, soy sauce and honey in a small saucepan.
  6. Cook over medium heat until it starts to simmer.
  7. Mix together the water and the arrowroot powder in a separate bowl.
  8. Slowly add to the saucepan constantly stirring until the sauce thickens.
  9. Pour the sauce over the meatballs and serve.

I love to turn this into a stir-fry by cutting up some peppers and pineapple and serving it over wild rice or broccoli slaw. Yum!

If you are looking for a good crock pot freezer meal, this is perfect! You can put the sauce in ice cube trays and freeze, the seal up the frozen sauce cubes and meatballs in a freezer bag. When you are ready to cook, just put the contents of the bag in the crock pot with 1 cup of water and cook on low for 4-6 hours.
