Paleo and Gluten Free Blueberry Muffins. Moist and full of flavor, these paleo muffins taste like they came from your favorite bakery. Full of whole, unprocessed ingredients, this is the best paleo muffin recipe out there!

 

 

 

 

 

 

 

 

 

 

 

 

I can’t even tell you how excited I am to share these delicious muffins with you!! These taste like bakery muffins, you know the ones that are full of flour and sugar and taste like heaven? Yep, I have recreated muffin heaven in my kitchen, except these are completely gluten free and perfect for any caveman diet.

Ingredients

    Muffin Ingredients:
  • 2 cups almond flour or sunflower seed flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp melted coconut oil
  • 3 eggs
  • 1/2 cup honey
  • 1/2 cup milk (any kind will do, I used raw milk for these, but coconut milk is just as good)
  • 1/4 tsp almond extract
  • 1 cup blueberries (fresh or frozen)
  • Crumb Topping Ingredients:
  • 1/4 cup almond flour
  • 2 tbsp coconut sugar
  • 1 tbsp coconut oil

Instructions

    Muffins:
  1. Preheat oven to 350.
  2. Combine everything except the blueberries in a mixing bowl.
  3. Stir well.
  4. Gently fold in the blueberries.
  5. Scoop batter into muffin tins lined with cupcake liners.
  6. Bake for 20 minutes until a toothpick inserted in the center comes out clean.
  7. Top with crumb topping.
  8. Crumb Topping:
  9. Mix coconut sugar and almond flour together.
  10. Using a pastry cutter, 2 knives or your fingers, mix the coconut oil in to the flour and sugar mixture until it resembles fine crumbs.
  11. Sprinkle on top of the muffins while they are still hot.

    That looks really good! I normally use a Gluten Free all purpose blend like Glutino or Betty Crocker but the more of these recipes I see the more I am become less afraid to experiment with other flours!

      Jen, with all due respect, most of the manufactured GF flour blends are filled with empty carbs (white rice, potato starch, tapioca, corn starch, etc.) which means little or no nutrition and instant weight gain. Just because something says "GF" on the label, does NOT mean it's healthy. I LOVE PALEO because it avoids ALL the crap from unhealthy grains. There is so much you can do with nut meals (almond, cashew, hazelnut), coconut flour, quinoa and buckwheat. Btw, quinoa and buckwheat are allowed on Paleo diets because they are considered pseudo-grains. Quinoa is actually a seed. When I do use grains, I go for the healthy ones (amaranth, millet, brown rice, oats). Check out Bob's Red Mill single grains products, almond flour and coconut flour! Do your body good, live long, well and healthy!

    Now I need to find some almond powder so I can try to make these. Any ideas where I can find some as I live in the middle of no where.

      Amazon, Walmart (they carry Bob's Red Mill brand), or other online sources like nuts.com or Honeyville's website. I find the cheapest is Amazon, where you can buy 5 lbs for just under $40.

      It can be ordered via Internet from numerous sources, such as Red Mill, but if you are in the middle of nowhere, but with a food coop or similar store, that is a good place to look. Such things are fortunately appearing in more and more chain grocery stores.

      Hello cbusch, it is called almond flour or almond meal (not powder). If you go online, you can also find it at abesmarket.com or thrivemarket.com or vitacost.com Check them out and compare prices and choose what works best for you. It's worth it to be healthy! Almonds are loaded with protein, healthy oil, and help lower cholesterol. Great for snacking too!

    Yummy muffin! I just wish that blueberries are sold cheap here. In fact, I hardly see blueberries in the market. But once I got a chance blueberries, I will definitely try this recipe so I need to pin/bookmark this :)

      We have a nut allergy in our home too. The All Purpose gluten free flour might be our best option. I think coconut flour would be too dense and strong in flavor for this recipe but I'm anxious to see what other ideas people have to replace almond flour!

      I have also used amaranth flour successfully in my gluten-free/grain-free/nut-free recipes. Amaranth is a seed and can be used for Paleo purposes. Bob's Red Mill is where I got mine. Being close to the middle-of-no-where, the internet is my best friend for ordering specialty flours for baking!

    Substituting coconut flour makes the muffins dry and dense, so that won't work. I have used sunflower seed flour in all my baking recipes and it works great as a substitute. I will be posting a tutorial on making that on Saturday. If you have an issue with the almond extract you can substitute twice as much vanilla or try rum extract :)

    Any substitute ideas for the coconut oil and coconut sugar? I'm allergic. :( I love that you used Almond flour though - it's one of my favorites to use!!!

      You can use butter or organic olive oil instead of the coconut oil. You can evaporated cane juice or sucanat in place of the coconut sugar :)

    Yum these are really good, i made them with sunflower seed flour, they turned out amazing!!! I dont even like sunflower seeds, but these muffins yum.     Today (7/11/2014) is Blueberry Muffin Day and I wanted to make some. I used your recipe and they are really good! I didn't have any almond extract so I used vanilla and it worked just fine. They are really good! I didn't see where it said how many it makes (but I am probably overlooking it), but it does make 1 dozen. Thanks!

    Doesn't anyone else get as frustrated as I do.... I find beautiful recipes like yours' on line; and therein - lies the problem. My kitchen is downstairs...I want to be near the stove, mixing bowls and tools...in order to make these recipes come to the kitchen table!! I have to write these recipes out..in order to even get started. So, I'm wondering why we aren't able to print them out. Could someone explain? I know I'm not a computer expert...but what don't I understand? How do other wanna-be-bakers manage this?

      Carole, when there isn't a print option I just highlight the text, copy it, and then paste it to a word document. Then you can print it or save it to your computer.

    Just made these today and used the coconut milk I had in the fridge - I added a bit more butter because sometimes things are dry in Colorado. They came out amazing!     As it's now being claimed that honey is no better for you than sugar, I'm wondering if I could somehow use powdered Stevia extract instead? I have used this with great success in baking, but not sure how this would affect the finishing result of your muffins?

      You would have to play around a little bit, the honey adds moisture to the muffins so you would have to compensate for the lack of liquid, possibly add more milk or coconut cream. If you have success, please let me know, I would love to add that option to my recipe :)

    I just made the batter following the directions w almond flour. Is it supposed to be super Liquidy? Help! What should I do...add some coconut flour?

      It shouldn't be any more liquid than a regular muffin batter, that's really strange, I've never heard of that :/ 2 tablespoons of coconut flour should thicken it up, but will change the consistency of the muffin and give it a sponge like texture.
