Paleo/Gluten Free Chocolate Cupcakes. Looking for all the cupcake taste without all the cupcake guilt? I have the perfect recipe for you! Full of whole, unprocessed ingredients, these cupcakes are sure to satisfy your sweet tooth without ruining your diet. Perfect paleo dessert recipe!

These cupcakes are so delicious, you won’t even notice that they are grain free! These ones happen to be topped with a peanut butter buttercream frosting. I know that peanuts aren’t technically paleo, but in my family eating chocolate without peanut butter is practically a sin.

Ingredients

    Cupcake Ingredients:
  • 2 cups almond flour or sunflower seed flour
  • 2 Tbsp coconut flour
  • 3/4 cup cocoa powder
  • 1/4 tsp sea salt
  • 1/2 tsp baking powder
  • 4 eggs
  • 1/2 cup milk (any kind)
  • 1/2 cup honey
  • 1/4 cup coconut oil (melted)
  • Frosting:
  • 1 cup peanut butter (you can sub almond butter if you don’t want to be a paleo rebel)
  • 1/2 cup cocoa powder
  • 1/4 cup honey

Instructions

    Cupcakes:
  1. Preheat oven to 350.
  2. Combine dry ingredients.
  3. Add the remaining ingredients and mix well.
  4. Line a muffin tin with cupcake wrappers and fill 3/4 of the way with batter.
  5. Bake for 20 minutes.
  6. Cool completely before frosting.
  7. Frosting:
  8. Combine all ingredients in a bowl and beat with a hand mixer until light and fluffy.

      This makes 12 cupcakes, I have never frozen them, the kids would KILL me if I didn't let them eat them right away lol! If you do freeze them, let me know how they turn out :)

    Ok, I made the cupcakes-they are cooling. Is there a secret to the icing? Did you use almond butter? I am using peanut butter and have made multiple batches and it turns out more like chocolate fondant or fudge. I am not sure what I am doing wrong, but it isn't even a little light or fluffy.
    On a good note-the cupcakes smell divine (but are too hot to eat yet!)

      When I made the frosting I had to beat the heck out of it on high with my hand mixer (Seriously I beat it mercilessly lol) If it's still having issues, you could add some butter, regular cream or coconut cream, that should help it get light and fluffy :)

    Peanuts are legumes- Peanuts are NOT Paleo (Almond Butter might be a better Paleo substitution

      Thanks for your input! I know that peanuts are not paleo :) I said that in my post and I did say that almond butter was a great substitute if you didn't want to be a paleo rebel. Sometimes I just feel like being a rebel ;)

    Looks Yummy! Thank you for sharing. I'm excited to make them this weekend for our running group. I love that it is Paleo/Gluten Free. I just started Crossfit five months ago and this is a perfect recipe. How many cupcakes does this make? Also, can this recipe be made as a cake too?

      This recipe makes 12 cupcakes. It works as a cake, you just need to bake it a bit longer (about 25-30 min) Hope you enjoy!!

    I'm making these now and they are not nearly done after 20 mins. I'm making 12 cupcakes and substituted maple syrup for the honey - but other than that followed recipe to the T. Can't imagine the maple syrup would have much to do with the fact they're not done. Any ideas? Thanks!!! They smell delicious and my son licked the batter bowl clean... I know they're going to taste good!

      I'm so sorry that they aren't turning out. Coconut flour is such a finicky ingredients and since maple syrup can be much thinner than honey, it could explain why they are not thickening up and cooking all the way through.
