Paleo Thin Mint Style Cookies

Paleo Thin Mint Style Cookies. No need to hide when the girls scouts come calling. This paleo recipe for thin mints will satisfy all your cookie cravings.

Don’t despair when all your friends are scarfing thin mints and you feel left out, I have a great recipe for AMAZING thin mint cookies that are totally gluten free and caveman approved. YAY!

Paleo Thin Mint Style Cookies

Ingredients

    Cookies:
  • 1 cup almond flour or sunflower seed flower
  • 2 tbsp of coconut flour
  • 2 tbsp of cocoa powder
  • 1/8 tsp of sea salt
  • 1/4 tsp of baking soda
  • 2 tbsp coconut oil
  • 1/4 cup of honey
  • 1 tsp peppermint extract
  • Chocolate Coating:
  • 2 cups chocolate chips
  • 1 tsp peppermint extract
  • 2 tbsp coconut oil

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix all the cookie ingredients together by hand.
  3. The dough should be thick, but workable.
  4. Roll the dough into small balls, place on a piece of parchment paper and press flat with the palm of your hand.
  5. Bake for 8 minutes.
  6. Cool the cookies then place in the freezer.
  7. Melt chocolate, peppermint and oil in a double boiler and dip the cookies one at a time into the chocolate and let set on a piece of parchment paper.

There are 2 methods to melting the chocolate.

Double boiler:

Melt the chocolate, coconut oil and peppermint extract in your double boiler, stirring constantly until the chocolate is thin and pourable. You may have to add extra coconut oil if your chocolate is too thick.

Microwave:

Place all ingredients in a microwave safe bowl and heat for 30 seconds, take out and stir. Repeat this process until the chocolate is pourable. You may need to add extra coconut oil if the chocolate is too thick.

Once the chocolate is ready you can coat your cookies. Confession time, I’m lazy when it comes to this process. I prefer to use cookie molds to coat my cookies. It is so much easier than hand dipping. Plus they look so much nicer, when I hand dip, the kitchen looks like a chocolate serial killer just murdered a bunch of Hershey’s kisses on my counter. Not to mention the cookies themselves look like something that is less than appetizing. So I cheat a bit, don’t judge, this is why I’m almost Supermom, there is a margin of error built in.

I digress, back to the cookies. Dip your cookies however you please and voila! yummy thin mint cookies to make all your Girl Scout cookie eating friends jealous. Store in an airtight container in your fridge and enjoy!

    I use cookie molds that you can find at Joann's or Michael's in the candy section. They are made for coating cookies in chocolate. I make a huge mess if I dip cookies so I gave up and take the easy way out :)

      No it's slightly finer, most grocery stores carry it, or you can use your ground almonds and make your own, it's a pretty easy process. Here is a great website that shows you how:

      No need to hate. You're right though, caveman didn't use any of those ingredients, they also didn't have indoor plumbing or internet access. I'm not trying to recreate the stone age, I'm just a mom trying to make healthier choices for her family, sometimes that includes trying to find a way to make occasional treats out of less processed ingredients.
