Hi, my name is Jordyn and I’m a chocoholic (Hi Jordyn!). So now that we have that out of the way, can I just tell you how much I love these cookies, they are soooooooo good and such a great paleo compliant treat for those occasional days when fruit just won’t satisfy your sweet tooth.
My husband claims that these paleo double chocolate chip cookies are the best cookies he has ever had, now I’m not quite sure about that (I think he was just trying to get in my pants) but they are really, really good and have even fooled a few of my friends and family when we have served them at parties and other get togethers, they had no idea they were gluten free and *gasp* paleo.
I use this base for many of my paleo cookies and desserts, it can be easily modified to fit any number of tastes. Not a fan of double chocolate (yeah right, people like that don’t actually exist, right?)? Then add some white chocolate chips and macadamia nuts for an epic flavor combination. Ooooooh! Even better add some peanut butter chips for the ultimate chocolate peanut butter combination.
The bottom line is that these cookies are amazing just the way they are but could easily be dressed up to satisfy any sweet craving.

Ingredients
- 1 1/2 cups almond butter
- 1 cup coconut sugar (if you like a crunchier cookie, use 1/2 cup brown sugar and 1/2 cup coconut sugar)
- 1/2 cup cocoa powder
- 2 large eggs
- 1 tsp baking soda
- 1 tsp vanilla
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350.
- Combine all the ingredients (except the chocolate chips) into a large bowl, the dough will be pretty thick.
- Fold in the chocolate chips
- Roll the dough into 1 inch balls, put them on cookie sheet and push the balls to make them a bit flatter.
- Bake for 8 minutes and let sit for another 8 minutes to set.
