I can’t even tell you how excited I am to share these delicious muffins with you!! These taste like bakery muffins, you know the ones that are full of flour and sugar and taste like heaven? Yep, I have recreated muffin heaven in my kitchen, except these are completely gluten free and perfect for any caveman diet.
Paleo Blueberry Muffins
Ingredients
- 2 cups almond flour or sunflower seed flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tbsp melted coconut oil
- 3 eggs
- 1/2 cup honey
- 1/2 cup milk (any kind will do, I used raw milk for these, but coconut milk is just as good)
- 1/4 tsp almond extract
- 1 cup blueberries (fresh or frozen)
- 1/4 cup almond flour
- 2 tbsp coconut sugar
- 1 tbsp coconut oil

Instructions
- Preheat oven to 350.
- Combine everything except the blueberries in a mixing bowl.
- Stir well.
- Gently fold in the blueberries.
- Scoop batter into muffin tins lined with cupcake liners.
- Bake for 20 minutes until a toothpick inserted in the center comes out clean.
- Top with crumb topping.
- Mix coconut sugar and almond flour together.
- Using a pastry cutter, 2 knives or your fingers, mix the coconut oil in to the flour and sugar mixture until it resembles fine crumbs.
- Sprinkle on top of the muffins while they are still hot.
