It’s the New Year woohoo! And we all know that means all new resolutions. I’m pretty good about sticking to my resolutions as long as I don’t make too many at once. I think one year I made 25 resolutions, I’m sure you can guess how that turned out (crash and burn!).

This year my only resolution is to take control of my eating habits and one of the best ways for me to do that is with the Keto Diet. For those of you that don’t know about the Keto diet, it is essentially a high-fat diet — your meals are 70 or 80 percent fat; about 20 percent protein; and about 5 percent carbohydrate. The Keto diet switches you from burning glucose (which carbs provide) to burning ketones (which fat produces) for energy.

I love fats so it’s a pretty easy lifestyle for me to maintain, the problem is that I love sweets too and those have been pretty hard to give up 🙁 Fortunately, I can have my pudding and eat it too! This magical Keto Chocolate Pudding Recipe is completely inline with Keto principles but squashes my sugar cravings after just a couple bites.

The secret to this delicious Keto Chocolate Pudding Recipe is Thai Kitchen Coconut Milk. Thai Kitchen coconut milk contains only three pure ingredients: coconut milk, water, and guar gum (a natural thickener for added creaminess). Coconut milk is also a natural source of MCT’s (we all know how important MCT’s are in the Keto diet!!) and it’s also gluten-free, dairy-free, paleo AND vegan.

People sometimes assume that coconut milk is only for Thai recipes, but honestly, because of it’s mild flavor and creamy texture, you can use this stuff in pretty much any recipe that calls for milk or cream.  It’s also available in Regular, Lite (60% less calories and fat than regular coconut milk), Organic, and Organic Lite (USDA Organic certified).

Ingredients

  • 1 13.5- oz can Thai Kitchen Coconut Milk
  • 2 tsp liquid stevia
  • 3 large egg yolks
  • 1/4 tsp xanthan gum
  • 1/3 cup cocoa powder
  • 3 tbsp coconut oil
  • 1/2 tsp vanilla extract

Instructions

  1. In a medium saucepan over medium heat, combine the coconut milk and stevia. Bring to a simmer, stirring occasionally.
  2. In a medium bowl, whisk the egg yolks until smooth. Slowly add 1/2 cup of the hot coconut milk mixture into the egg yolks, whisking continuously.
  3. Slowly whisk the egg yolks back into the pot of hot coconut milk. Reduce heat to medium low and stir in xanthan gum, stirring constantly. Stir in cocoa powder and cook until mixture thickens, about 3 to 4 minutes.
  4. Remove from heat and stir in the coconut oil and vanilla extract until smooth. pour into dessert cups and refrigerate until set, 2 to 3 hours.
