Who doesn’t love bacon? Bacon makes everything better. I could eat bacon with every meal and never get sick of it. Unfortunately bacon gets a bad wrap and a lot of us avoid eating it. Bacon is a processed meat so it isn’t the healthiest option, but if you choose bacon sourced from local farmers or from pigs that aren’t fed a constant diet of corn and soy, you can feel less guilty about indulging from time to time.
One trick I have discovered to assuage bacon induced guilt is to surround my bacon with uber healthy foods. This BLT in a bowl is a perfect example of that! Instead of the traditional BLT served on bread (a big paleo no-no) this bowl gives you all the flavors while still being caveman compliant. It has become my favorite quick lunch. You could even make a salad jar with it for an on the go meal.
This is another one of those recipes that isn’t really a recipe, it’s more of a clever assembly of ingredients. There is no science to it. No measuring involved. Honestly, I feel like sharing it is a cop out for creating an actual recipe, but I needed an excuse to play with my new camera lens and I was having it for lunch anyway, so why not blog about it.
Ingredients:
Bacon, cooked and chopped
Lettuce of choice (I used romaine)
Tomatoes
avocado (I guess the avocado turns it into a BLTA in a bowl lol)
Feta Cheese (optional and not paleo complaint, but I really, really wanted some cheese)
Olive oil
Balsamic Vinegar
Pinch of sea salt
Combine everything in a bowl (in whatever quantities you want) and enjoy.
