Sausage and Steamed Veggies with Pineapple Sriracha Sauce

Sausage and Steamed Veggies with Pineapple Sriracha Sauce is a flavorful dish featuring savory sausage and vibrant vegetables tossed in a sweet and spicy pineapple Sriracha glaze.

Ingredients

  • 1 pound chicken sausage links (I prefer the pineapple bacon version from Aidells, but use your favorite)
  • 2 cups broccoli
  • 1 cup diced carrots
  • 1 cup diced red peppers
  • Pineapple Sriracha Sauce
  • 2 cups pineapple juice
  • 2 tsp sriracha sauce
  • 1/2 tsp salt
  • 1/4 cup brown sugar

Instructions

  1. Prepare Sauce (instructions below)
  2. Steam the veggies for 10-15 minutes
  3. Cut up sausage into half circles or quarters
  4. Saute sausage in butter over medium-high heat until brown on both sides.
  5. Mix the veggies and the sausage together and pour sauce over it.
  6. Serve warm
  7. Pineapple Sriracha Sauce

  8. Cook pineapple juice and brown sugar over medium heat until it is reduced to about half a cup
  9. Add sriracha sauce and salt
  10. Serve warm
  11. If the sauce is too thick, add a bit of coconut or olive oil to thin it out

  6. You commented about the sauce potentially being too thick - I reduced mine to almost 1/4 cup and it refused to thicken at all. The flavours were really great and not something I would have thought to put together on my own and I plan to make it again - do you have any thoughts about what might have been my juice's problem for next time? xD
    1. What brand of juice did you use? Was it 100% pineapple juice or a blend?
      1. I used a 100% unsweetened pineapple juice. It wasn't that big of an issue, It was still absolutely fantastic :]
