Ah-mazing Gluten Free Chocolate Chip Cookies

Gluten free and paleo chocolate chip cookie. Soft and chewy with no processed ingredients! So simple to make too, just a few basic ingredients and you'll have the perfect paleo dessert

I don’t mean to brag but these are probably the best cookies ever made, and they are so easy that it is impossible to mess them up. I recently learned that almond butter is fantastic for baking, so I’m working on some more cookie recipes and a brownie recipe too that I will share later. Here is the recipe for these amazing cookies:

Ingredients

  • 2 cups raw almond butter (learn how to make your own here )
  • 2 eggs
  • 1 cup of coconut sugar (you can also use 1/2 cup of brown sugar and 1/2 cup coconut sugar if you like a crunchier cookie, but it won't be paleo) If you like a super soft chewy cookie you can sub honey, usually 3/4 cups is perfect.
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350.
  2. Grease a cookie pan really well with your preferred oil ( I use the USA pans because NOTHING sticks to them EVER and I don’t even have to grease them)
  3. Combine all ingredients in a bowl except the chocolate chips.
  4. Mix until the all the ingredients are combined well, unlike when using flour, you can’t over mix this.
  5. When everything is well combined, gently fold in the chocolate chips.
  6. Drop by spoonfuls onto cookie sheet (depending on almond butter you used, dough may be thicker and need to be rolled into balls and flattened with the palm of your hand)
  7. Bake for 8 minutes.
  8. Remove from oven and let sit on the cookie sheet for another 15 minutes so that they set properly.

  10. Did the recipe change? Didn't this recipe originally use honey instead of sugar? Can honey or white sugar be used instead of coconut sugar? Thanks!
    1. Hi Chris! You can absolutely use honey if you are subbing it for all the the sugar only use about 3/4 cup. I've never tried regular white sugar with it because I like the flavor of the darker sugars, but you could certainly try :) It should be fine. Let me know if you do try it, I'm curious to know how it works out.
