With summer drawing to an end, there has been a push in my house to make as many frozen treats as we can before the leaves start to change and the cold weather comes to stay for a while. One of the creations being devoured at our house are these delightfully rich and creamy Double Chocolate Cashew Milk Popsicles.

This idea was born out of my family’s love for chocolate and my attempt at keeping us as close to a paleo diet as I can without driving my children completely insane. Fortunately this recipe is simple, tasty and keeps us going strong in true caveman form.

Before I get to the recipe I have to tell you about my recently developed love affair with Silk’s chocolate cashew milk. On a recent trip to Walmart I saw this new Silk milk and decided I needed to give it a try because you can’t really go wrong with cashews and chocolate, right?

The creamy texture and rich chocolate flavor had me hooked from the first sip. Throw in the fact that Silk Chocolate Cashew Milk is non- GMO, gluten free and dairy free and you have one happy cave momma! Of course it seemed only natural to use it when making these yummy chocolate popsicles!

The great news is that these glorious popsicles are embarrassingly easy to make, it only takes a popsicle mold and a few simple ingredients and you will be on your way to satisfying your frozen chocolate cravings. Ready to try it? Great!

Ingredients:

3 cups Silk Chocolate Cashew Milk

2 cups semi-sweet chocolate chips

1/4 cup coconut oil

Directions:

Pour cashew milk into popsicle molds.

Freeze at least 6 hours (preferably overnight)

When the popsicles are completely frozen, melt the chocolate and coconut oil in a double boiler over medium heat.

Pour the melted chocolate into a tall glass and let sit until cool, about 15-20 minutes (don’t worry it will still be thin enough to work with)

While the chocolate is cooling, line a cookie sheet with a piece of parchment paper

Dip the popsicles in the chocolate and set them on the parchment paper.

After all the pospicles are sipped, place cookie sheet in freezer for at least 15 minutes. Serve immediately or save for later.
