Today I’m taking a break of all the tempting Christmas goodies I’ve been posting and looking ahead to the new year. Well, New Year’s Eve to be exact. This year I’m planning on ringing in the new year with a fun and fabulous fiesta! Forget champagne and cavier, bring on the margaritas and mexican food! Doesn’t that sound like way more fun?!
2015 has been a great year and I can’t wait for 2016! It seems only fitting to ring out the old and bring in the new with a fun and festive party that celebrates all the fun I had this year and all the fun that is to come. To make this celebration the best it can be, I’ll be including a few of my favorite Mexican appetizers like these Cheesy Chicken Enchilada Bites and the following Gluten Free Fiesta Flatbread.
My family is in love with this gluten free flatbread recipe. It is just the right amount of spicy, plus it is one of those gluten free foods that doesn’t taste like a gluten free food. Winning!
The secret ingredient to this scrumptious flatbread is Pace® Chunky Salsa- Medium. Pace® is my go to ingredient for a lot of recipes. It really kicks it up a notch in this recipe with it’s genuine southwest flavor. Pace® can be found at your local Walmart comes in a variety of heat levels and textures so you are sure to find one that your family adores.
Enough chit chat, right? Let’s get to the real reason you are here. This ridiculously good Gluten Free Fiesta Flatbread!
Ingredients
- Paleo cracker recipe
- 1 cup grilled chicken
- 1 cup Pace® Chunky Salsa, medium
- 1 cup colby jack cheese
- 1/2 cup diced tomatoes
- Fresh cilantro (optional)
Instructions
- Prepare the paleo cracker recipe according to the directions found here . Only do not cut it before putting it in the oven.
- Bake the crust for 8 minutes
- Remove from oven and pour the salsa over crust.
- Add chicken and tomatoes
- Sprinkle cheese over the chicken and tomatoes
- Broil on high for 5 minutes or until the cheese is slightly golden.
- Serve warm.
