It’s March. You know what that means? BASKETBALL!! My son is so into all things basketball, which of course means the whole family is absorbed into basketball fever. Weekends are spent cheering on our favorite teams and players and scarfing delicious game day grub.
When our favorite team is playing I like to make a big deal and throw a mini party to cheer the team on. To get us stoked, I stock up on snacks, drinks and other game day essentials like Nexium 24hr.

Speaking of spicy food, let me introduce you to the best party dish you’ll ever meet. Buffalo Chicken Nachos.

Ingredients
- 8 oz tortilla chips
- 2 cups shredded chicken
- 1 cup hot sauce
- 1/2 cup ranch dressing
- 1 cup heavy cream
- 1 lb monterrey jack cheese, shredded (don't use the pre-shredded cheese)
- 8 oz colby jack cheese, shredded (again, don't use the pre-shredded cheese, the additives they put in there make the cheese not melt the right way)
- 1/4 cup blue cheese crumbles
- green onions (optional)
Instructions
- Preheat the oven to 400 degrees
- Combine hot sauce, chicken and ranch dressing in a bowl, cover and set aside
- In a medium sauce pan, bring heavy cream to a simmer over medium heat
- Add the monterrey jack cheese, a handful at a time and stir until melted, making sure that the cheese is completely melted between handfuls
- Lay 1/2 the chips on the bottom of a cast iron skillet or a rimmed cookie sheet
- Top the chips with buffalo chicken mixture
- Drizzle half the melted cheese on top of the chicken
- Add another layer of chips and top with remaining chicken and melted cheese
- Sprinkle colby jack cheese over the top of the nachos
- Cook nachos for 5 minutes
- Sprinkle with blue cheese crumbles and green onions
- Serve immediately.
