Paleo and Gluten Free Peppermint Patties! All the taste of the store bought ones, but way more healthy! This paleo recipe will satisfy your sweet tooth without breaking any caveman rules.

One of my favorite things in the entire world is peppermint patties. Dark chocolate & peppermint? What could be better! I was on a mission to find these before Valentine’s Day so I could surprise my family with a yummy candy treat that wasn’t bad for them. It took me so much longer to come up with a recipe than I thought it would, but here were are 5 days before Valentine’s Day and I have finally succeeded! I’m so very pleased with the way these candies turned out and how similar they are to the store bought peppermint patties that I used to get by the case lol!

Ingredients

    Ingredients for the patties:
  • 1 cup finely shredded coconut (I use my coffee grinder to make it as fine as I possibly can)
  • 1 tbsp milk (any kind will do)
  • 2 tbsp melted coconut oil
  • 1/4- 1/3 cup honey depending on how sweet you like it
  • 1/2 tsp peppermint extract
  • Ingredients for the chocolate coating:
  • 1 cup dark or semi-sweet chocolate chips (enjoy life is perfect!)
  • 1 tbsp coconut oil

Instructions

  1. Combine coconut , milk, melted oil, honey and peppermint extract in a bowl.
  2. Mix well and form into balls.
  3. Place a piece of parchment paper on a cookie sheet.
  4. Flatten the balls on the parchment paper until they are about 1/2 thick.
  5. Place in freezer for 10-15 minutes.
  6. While the patties are freezing, heat up the chocolate chips and coconut oil in a double boiler (you can heat up in the microwave as well, but a double boiler works best).
  7. When chocolate is melted completely, turn down the heat and remove the patties from the freezer.
  8. Completely submerge the patty in the chocolate, remove with a fork.
  9. Let cool on a cookie rack or piece of parchment paper.
  10. Store covered in the fridge.

    Yum! I've been experimenting with chocolate lately...and I would definitely try out this recipe, but I can't have honey...I need to find substitutes for honey and brown sugar while on my current diet, and I'd be good to go with a lot of alternative recipes.

    Being strict paleo, seeing even 1 tbsp of (any milk will do) made me frown a little, LOL. If you want to keep it paleo, I'd opt for unsweetened almond milk or coconut milk for your milk of choice. Also, Yona...I'm still researching and reading different opinions on coconut crystals as a sweetener substitute, might want to look into that and see if that will work for you!
