Pepperoni High Rollers with Roasted Red Pepper Mayo

This week we finally caught a glimpse of spring, the sun came out of hiding and our temperatures popped up into the mid seventies. The cold weather is on it’s way out and along with it go all the warm comfort foods of winter like soups, stews and hot chocolate. Taking their place are sandwiches, salads and iced tea. One of our favorite warm weather treats are high roller sandwiches. They have all the flavor and satisfaction of a sandwich but without the heaviness of a lot of bread so they are the perfect afternoon snack, or a great appetizer for a weekend cookout.

This Pepperoni High Roller with Roasted Red Pepper Mayo is a family favorite, it is one of the few sandwiches or wraps that I make that everybody enjoys, with 8 people in the house, that is actually quite a feat. Thankfully the whole family LOVES Hormel pepperoni, I figured if I put pepperoni in the wrap then at least I could everybody to try it. Who knew they would absolutely love it?!

It is one of the easiest recipes to put together. First thing you need to do is make the roasted red pepper mayo:

Ingredients:

1/2 cup mayo

1/2 cup roasted red peppers

1 clove minced garlic

dash of cayenne pepper

Directions:

Combine all the ingredients in a blender and blend until smooth and creamy. Store in an airtight container in the fridge for up to 2 weeks.

Next gather all your ingredients, for this recipe I used spinach wraps, Hormel Pepperoni, Gouda cheese, romaine lettuce and of course the roasted red pepper mayo

Spread the mayo on the wrap

Top with Gouda cheese

Top the cheese with a thick layer of pepperoni

Top that with lettuce

Roll the wrap up tightly and then slice into 1 inch circles.

    Did your roast your red peppers yourself or is this something I can purchase? I've never used them before and I'm not sure what I should be using. Please advise. Thank you for a great recipe.

      I roasted mine on my own, or you can buy them where you would find pickles at your local grocery store
